Can I filter to just the open tasks?→
Yes. You can filter the list by status to see only Todo, only In progress, or only Done tasks, or show everything at once. Filtering only changes what you see; your exports and the progress count still cover every task in the project.
What is the difference between the CSV and Excel exports?→
Both contain the same columns (Task, Owner, Status, Priority, Due). CSV is a plain text file that opens anywhere and is easy to import into other tools. The Excel export is a real .xlsx workbook, which is nicer to open directly in Excel or Numbers with the columns already laid out.
